Why don't you ask the kids what they'd like to play? Or use a favorite piece from spring festival. When I graduated high school, my favorite piece was the Holst 2nd Suite in Eb and most of my peers really loved it too. We hadn't played it that year, but in years past. We begged our director to let us play it for graduation and I'm sure he was happy to oblige since we were begging for Holst :-) There are also pieces like Procession of the Nobles that just seems to scream out, I'm a good celebration piece! That one was played by the wind ensemble at my college graduation. Or something more sentimental like a "Farewell Symphony" type piece where you slowly have the seniors leave towards the end of the song if you have a piece that ends quietly.
